Pork and Potato Ragout Recipe

Ingredients:
1 kg pork tenderloin
1 kg potatoes
2 onions
4 cloves of garlic
150 g bacon
2 chili peppers
1 tomato
1 can of white giant beans
1 dl water
Vegetable oil
Salt
Pepper
Marjoram

Garnish: stuffed bell peppers, sliced hot peppers, finely chopped parsley

Sour cream dipping sauce:
450 g sour cream
A handful of finely chopped parsley
1 tablespoon chili flakes
Salt
Pepper

Instructions:
Start by removing the skin from the pork and cutting it into slices, then into 2 cm cubes. Also dice the bacon.

Peel the potatoes and cut them into 2-3 cm pieces. Finely chop the cleaned onions and garlic, slice the chili peppers, and cut the tomato into 1 cm cubes.

Heat up a generous amount of vegetable oil in a pan and fry the potatoes until golden brown. Once done, transfer them onto a paper towel-lined dish, season with salt and set aside.

In a thick-bottomed pan, fry the bacon until crispy, then add the onions and sauté over medium heat until translucent. Add the pork, season with salt and pepper according to taste.

When the pork is almost done, add the marjoram, diced tomato, chili peppers, garlic, and beans, and fry until the pork turns a nice shade of red. Add 1 dl of water and let it boil on high heat for about 30 seconds to a minute.

Once the ragout is done, add the fried potatoes, stir well and serve immediately.
