Fall is among us and guess what that means?! Soup and stew season. We are so excited to start whipping up recipes that will warm you up, literally. If you’ve been searching for some soup inspiration, we’ve got you covered with this delish Macaroni Minestrone recipe! Add as many vegetables as you’d like, and make it your own! This is our take on it to get you started.
Ingredient List:

¼ cup of olive oil

1 large onion
-
5 garlic cloves
-
3 celery rib
-
4 cups of vegetable or chicken stock

4 to 5 cans of canned whole peeled tomatoes

1- 2 cups of elbow pasta

1 sweet potato
-
½ lb of ground beef or meat alternative such as beyond meat
-
2 diced carrots
-
2 sprigs of rosemary
Other optional vegetables:

Zucchini
-
Corn kernels
-
Kale
-
Spinach
Steps:

Prepare your soup base: Brown the ground beef or meat alternative. Once cooked through, add onion and garlic. Once onion and garlic are translucent, add stock and canned tomatoes. Let simmer for at least 30 minutes.

Begin to add all of your vegetables. Once they are almost cooked through, pour in pasta. Add in your sprig of herbs and let simmer until pasta is tender and vegetables are cooked through—about 10 minutes.
